Chocolate Chip Cookie Recipe

Ah, sorry for the hiatus. I was so busy with my finals :/

I'l post up the chocolate bailey cake recipe soon :)  It's d'lish!!

And also, I've found/amended the best cookie recipe, I myself have ever made!



Chocolate Chip Cookie Recipe


450-500 grams chocolate chips
9 ounce grated cadbury bar
2 1/2 cups oatmeal (grind till it becomes fine powder)
1 1/2 cups chopped nuts

250 grams butter
2 eggs

2 cups flour
1 tspn bicarbonate soda
1 tspn baking powder
1/2 tbspn vanilla essence
1 tspn salt
2 cup brown sugar
2 cup white sugar

Set oven to 185 degrees Celsius.

In a mixing bowl, put butter + brown sugar + white sugar. Beat till creamy and fluffy.

Add flour + bicarbonate soda + baking powder + vanilla essence + salt + eggs. Mix well.

Add grated cadbury bar + chocolate chips + oatmeal + chopped nuts. Mix using a spatula or wooden spoon. Fold the batter till mixed well.

Roll batter into small balls. Put a layer of baking powder OR spray a layer of oil on the baking tray.
Put the chocolate chip ball 2 inches apart from each other. Bake in the oven for 13 minutes.

Bring out and scoop it to a cooling rack and repeat steps with the remaining batter. Let it cool down. It will harden :)

Kim Chi Pancake (Jeon)

One of my top 3 favourite food in the world, has got to be Korean! 
I have pretty strong taste buds, thus what attracted me to Korean food is basically the combination of their sour and spicy food. ie; kim chi! 

I'll save kim chi jigae (soup) for another day.
My sister found this recipe, and have kept it and used it ever since. It is by far one of the best I've tasted as I like my pancake a little chunky and crispy :)






Serves: 2 -4

Ingredients: 
1 cup of chopped kimchi
3 tbs kimchi juice
2 tbs chopped onion
½ tsp salt
½ tsp sugar
½ cup flour (all purpose flour)
¼ cup of water

Instructions:
In a bowl, place chopped kimchi, kimchi juice, chopped onion, salt, sugar, flour, and water and mix it well with a spoon. Heat up a 12 inch non-stick pan over medium high heat and drizzle about 2 tbs grape seed oil.

Place the mixture of kimchi pancake batter on the pan and spread it thinly and evenly with a spoon. Cook it for 1-1 ½ minutes until the bottom gets golden brown and crispy. Turn it over with a spatula or flip it.

Lower the heat to medium and cook for another 1½ minutes. Turn it over one more time and cook for 30 seconds before transfering it to a serving plate. 

p/s. Make sure you fry it till it gets golden, else it would not be crispy :)


Chinese Porridge (Congee)

Being brought up in a Chinese family, I've been made to love everything about Chinese food. And one particular dish I loved when I was younger, was porridge my mom made. I would easily polish 2 bowls of porridge after school! Sometimes 3 :p  hee hee.

I've not mentioned much about myself before, so now I will :)

I'm a twenty-three year old Malaysian Chinese girl, who honestly, really, isn't that Chinese at all. I can't speak Cantonese or Mandarin fluently, and I will just die, if I had to speak it to save my life. I'm currently in Melbourne, doing my last year of studies in RMIT University, majoring in Business IT. And I love cooking and baking.  I love, love, love feeding people. Making them go 'mmmmh mmmm ' :)  It makes me happy!



(this is served without spring onions, or anything else because my friend is vege-unfriendly -_-")


Ingredients:
1 cup short grain or jasmine rice
10 cup chicken stock
2 chicken lovely legs
1/2 cup peanuts
pinch of salt

Can be served with:
Chopped spring onions
Chopped century egg (My favourite!) :D
Salted egg
Preserved vegetables
Yau char guay
Braised peanuts
Soy sauce
White pepper
Sesame oil
(Anything you like actually!)

Instructions:
1. Wash the rice. Drain off water. 
2. Boil peanuts in water with a little salt till it becomes soft. I like to have it a little crunchy so I usually boil it till the outer is soft, but inner still crunchy.
2. Boil chicken stock, and add rice stirring until it comes to the boil.
3. Reduce heat, add the chicken and peanuts, and let it simmer for 2-3 hours. Every so often, stir it.
4. Add salt
5. Scoop the chicken out onto a plate and shred the meat. After shredding, mix it back in the porridge.
5. Tadah!

Fluffy Pancakes

This.Is.The.Best.Pancake.Recipe.Ever.!

I've tried one after another, different recipes of pancakes, tweaked it, went with my instinct (not too great w pancakes :p hehe), to achieve fluffy pancakes. To only be greeted with an 'okay' pancake all the time. But this pancake recipe is, LEGEN-DAIRY! I did not just say that. Nuuu.

Anyhoos, this recipe is originally from 17 & Baking. I emitted the bananas for a simple basic fluffy pancakes. Nomnomnom :D  You can however add anything you'd like into the batter. 



Makes 4-8 servings

2 cups all purpose flour
1/4 cup sugar
4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 3/4 cups buttermilk
4 large eggs
1/4 cup butter, melted and cooled
Cooking spray or vegetable oil for the pan

Instructions:
Sift together the flour, sugar, baking powder, baking soda, and salt in a mixing bowl. Make a well in the center. In a separate bowl, combine the buttermilk, eggs, and butter. Add the buttermilk mixture to the flour mixture and stir by hand until the batter is evenly moistened. (At this point, the batter can be covered and refrigerated for up to 12 hours, or used right away.)

Heat a large skillet over medium high heat and grease it lightly by brushing or spraying with oil. Drop about 1/4 cup of pancake batter into the hot pan, spreading them slightly into circles. Leave about 2″ between pancakes. Cook until small bubbles appear and the edges are set, about 2 minutes, then flip using an offset spatula. Cook on the second side an additional 2-3 minutes, or until the pancakes are golden brown. Serve at once with Maple Syrup.

p/s. I served my pancakes with a scoop of vanilla ice cream, and maple syrup. No words can describe the orgasm in my mouth. Mmm mm!
